Cucumber and pepper salad Preparation: 20 minutes
Marinating time: 15 minutes. A minimal number of ingredients make this salad easy and quick to prepare. The salad goes well with grilled meat, chicken, or fish.
Ingredients
2 short cucumber
1 teaspoon of salt
2 tablespoons of sugar
1 large - red pepper, thinly sliced
1 large, onion sliced
125ml of water
60ml of white vinegar
2 teaspoons of yoghurt for dressing
1 teaspoon of lemon juice
Method
Peel the cucumber and slice it in half horizontally, deseed and slice into strips. Mix cucumber with salt in a bowl and let it stand for 15 minutes. In another bowl mix vinegar, onion, pepper, water, sugar and salt and let stand for 1 hour. Rinse and mix all vegetables in one serving bowl and set aside for 15 minutes before serving.
